Copulette

Le Copulette o is pastissus sono dei dolci tradizionali della città di Ozieri (SS) e venivano preparati per buon augurio, in occasione di matrimoni. Il nome stesso richiama infatti l’unione tra i due sposi. Il dolce richiede una lunga preparazione e per questo pare che la sua lavorazione attenta e meticolosa un tempo fosse a totale carico delle donne anziane. Composto da un cuore di pan di Spagna ricoperto da una glassa molto leggera, che si ottiene montando almeno per un’ora l’acqua, lo zucchero e l’albume d’uovo. Ha una forma tronco conica con la base ovale, e ogni copuletta pesa circa 40 grammi. Il dolce è un presidio Slow Food dal 2006 ed anche Prodotto Agroalimentare Tradizionale (PAT) della Sardegna.

Preparation:

Pour the flour into a well on the pastry board and, after melting the lard in a bain-marie, pour it into the centre together with 50g of sugar and a pinch of salt. Once a smooth, soft dough is obtained, it is left to rest for at least an hour.

Meanwhile, the almonds are peeled and roasted in the oven and then ground. The eggs are worked with the sugar and, when the mixture is frothy and dense, the almonds are added. Roll out the dough into two similar sheets and only on one of them pour the filling evenly spaced. Cover the filled pastry sheet with the other and use an upside-down glass to make the copulette, sealing the edges with your fingers, and bake in the oven for about half an hour.

When they cool, they should be decorated with a thin layer of icing.
