Orziadas

One of the tastiest and most interesting seafood dishes in Sardinia are the orziadas, or otziadas, especially seeded and fried, also excellent with linguine and bottarga.

Anemonia sulcata, vulgarly known as Venus's hair and commonly called sea anemone, is a species of actinias widespread in the Mediterranean Sea. It has a diameter of about 5-10 centimetres and numerous long, stinging tentacles, often with purple-tinged apexes. They are collected by pulling them off the seabed substrate with a blade or fork.

It is a popular dish, especially in the Oristano and Cagliari areas, and is excellent accompanied by good Vermentino wine.
