Ricotta Mustia

Ricotta mustia is a fresh, lightly salted and smoked sheep's milk cheese. The name 'mustia', derived from the Sardinian language, indicates the final smoking process that is achieved with the smoke of typical Sardinian woods, such as holm oak, oak and strawberry tree. It represents one of the various traditional cheeses of Sardinian cuisine and is produced following ancient artisan traditions, dry-salted with fine salt and placed in smoke.

After the classic preparation of the ricotta, it is lightly pressed and smoked into a cylindrical shape; it has a firm and tender texture. This product is appreciated all over the world, especially in North America.

It is excellent grated, diced and goes well with cold meats, but it is also an excellent sauce for pasta and rice.
